Black Bean Lasagna

Mamacita says:  People are asking me for the recipe for my vegetarian black bean lasagna, so here it is!

Ingredients:

lasagna noodles (uncooked)
3 1/2 cups spaghetti sauce
1 cup sliced mushrooms (canned or fresh)
1 green pepper, diced
1 large onion, diced
2 cans black beans, rinsed and drained
1 can corn, drained
Swiss cheese
cheddar cheese
mozzarella cheese
1 teaspoon chili powder
1 teaspoon cilantro
1 teaspoon oregano
1 tablespoon garlic powder

What to do:

Grease a large rectangular pan. Preheat your oven to 350. Cover the bottom of the pan with uncooked lasagna noodles.

In a large bowl, combine everything except the noodles, cheese, and sauce, and mix well.

Spoon half the mixture over the noodles; cover with half the sauce and half the cheeses. (Cheese layer will be thick-ish)  Put another layer of noodles over the cheeses.

Spoon the rest of the mixture over the second layer of noodles; cover with the rest of the sauce.

Bake for 30 minutes; remove from oven and add the rest of the cheese. Return to oven and bake for another 15 minutes.

Eat up.
